Where Did All the Snacks Go?

Recently, my seven year old daughter had a friend over after school for a short time so her mom, a local school teacher, could finished up her parent conferences.  Usually I make something a little extra special for my girls and their friends when they come over.   But since this play date was only to be about an hour, I assumed that serving them something quick from the cupboard would be enough to satisfy the after school hunger.

Yes, this does open the question as to WHY I make the girls  super snacks  with play dates.  I know the highlight of their time together is not going to center around food.  They just want to PLAY.  They want to cram in as much play as possible in their time together.  And if chocolate and cartoons can also be a part of this cramming, then they’ve just added some bonuses to their day together.  Nancy Drew.jpg

I searched the kitchen and realized, once again, I was extremely low on snacks.  This seems to be a trend for me since the start of the school year.  The cabinets used to be overflowing and now the abundance of snacks is eluding me.  I feel like I need to channel my inner Nancy Drew and unlock “The Secret of the Hidden Snack Stash.”

Knowing that I didn’t want to serve stale Doritos, I backed a batch of “Peanut Butter Snack Cookies” for the perfect solution.  This recipe calls for only three ingredients and makes about 18 cookies, so it is fast too.  I need to put this soft cookie recipe in the category I’m going to name “Homemade in a Hurry.”

Ingredients

  1. 1 Cup Peanut Butter
  2. 1 Cup Sugar
  3. 1 Egg

Directions

Preheat oven to 375 degrees.  Mix all ingredients together.  Drop by rounded 1-2 inch balls on ungreased baking sheet.  You may roll cookie balls in extra sugar first as another option before placing on tray.  Bake at 375 degrees for 10-12 minutes.

I suggest keeping a close eye on your cookies.  One glance and they look like soggy peanut butter.  Instantly with a flick of a wand and a spell from Harry Potter, and the edges are brown.
