Family Reunion

Welcome, family!

My parents were visiting from Pennsylvania and my sister flew up from Florida, all for a Chuck E. Cheese birthday party for my daughters.  My girls decided to have a joint party with this famous rodent of pizza so a date was chosen about half way between their chuckecheesebirthdays in September and January.  I agreed to this idea because in one mega-money dropped stone, I killed about eight birds.  Two parties done, visiting with cousins done, children were fed pizza and cake, and absolutely no clean up for me are my favorite dead birds.

Usually I do very well having dinners covered when my family visits.  For breakfast, if I provide the correct brew of coffee then life is good.  But I seem to always forget about lunch.  My dad is a simple flavors eater while my sister is a vegetarian. I pulled from my recipe box this dusty clipping from a free magazine distributed from a local hospital that was mailed to my house years ago.  It makes a huge pot of a satisfying, warm, perfect for fall meal without a speck of animal product.  I was even able to freeze a quart container to warm me up another week.

Leeks can be “gritty” as sand and dirt get trapped in their stalks.  Prepare the leeks first by chopping off the bottoms.  Then separate each leek and soak in a bowl or sink of cold water to remove the grit.

The basil in this recipe really add a bite of fresh flavor to this dish.  Use the whole cup!  Its so yummy.  I love basil so admit I sneak more in there if I can.
