Cook with your essential oils! For lunch I made quinoa with wolfberries and walnuts mixed with a white vinaigrette. Young Living’s Vitality Oils are great to use in the kitchen. Wolfberries are the key ingredient in the super antioxidant and immune boosting Ningxia Red drink. You can buy the dried variety of the berries to use for snacking and cooking!

Here’s my recipe:
• Cook one cup of dried quinoa according to the package directions.
• Add 1/2 cup dried wolfberries and 1/2 cup walnuts during the last 2 minutes of cooking
• You may need to add a little extra water if mixture looks too “dry”
• Once cooking is complete, remove from heat and stir in two drops of Cinnamon Bark Vitality and two drops of Thyme Vitality
For the vinaigrette whisk the following ingredients together:
• 1/3 cup vegetable oil
• 1/3 cup rice wine vinegar
• 2 cloves of garlic, minced
• 1 tablespoon granulated sugar
• 1/4 teaspoon salt
• 1 drop of Black Pepper Vitality oil
Pour vinaigrette over quinoa. Enjoy!
