Mango May

I seem to be drawn to this tropical fruit each spring. A mango is such a bright and happy color, and it reminds me of warm sunny days in the not-too-distant future! A previous year I wrote about a mango cake to bridge the spring-to-summer months for me. Today the feature is a mango quick bread with the addition of coconut. I wish I was sitting under a palm tree while eating this.

The “cinnamon drops” in the recipe is the Cinnamon Bark Vitality essential oils from Young Living. I use their Vitality Oils so often in my cooking and baking.

For Cinnamon Bark Vitality, there is a measuring equivalent. One drops of oil equals 1 teaspoon of ground cinnamon. Two drops of oil are equal to closer to one tablespoon of flavoring from ground cinnamon.

Because of this imperfect conversion, which is common with Vitality Oils, I recommend starting slowly at first. Try one drop, mix well, and taste test before adding more. You can always add flavor, but you can’t take it away once it is in there!

Other vitality favorites of mine are grapefruit, lemon, and citrus fresh in my water. Citrus oils are so cleansing for our cells! I always have thyme, rosemary, and black pepper around for savory dishes. And the warm spiciness of nutmeg and ginger are a must for my baking.
