Molasses Banana Cake

Can banana dishes be associated with the holidays?

Of course they can, with the addition of warm, spicy ingredients like molasses, cinnamon, and clove.

Instead of powdered spices, I used the essential oils of cinnamon bark and clove in my cake. As I have mentioned in previous posts, when cooking with essential oils, you must use a quality brand that you can trust. Not all essential oils are created for ingestion–that is because not all essential oils are equally created.

Differences in quality are noted in so many products we use regularly: wine, coffee, leggings, high heels, shampoo, and the list goes on. Essential oils are no different in this comparison. Quality does matter.

There, public service announcement over! Let’s get back to baking!

The Molasses Banana Cake is another great way to use up those browning bananas. It could be a nice, sweet addition to your holiday brunch table. It tastes more like dessert than its bread cousin, even without the frosting. But I always add icing to my cakes because, honestly, I love it. I like a little cake with my frosting, if I’m being honest.
