Lemony Cheesecake Squares

My family loves homemade desserts. I need non-complicated ones right now, especially mid-week. Cheesecake Squares don’t last long around here. I should remember to make a double batch next time.

I also enjoy making this recipe because it can be a nice switch from a chocolate dessert. Now, my husband and daughters are all huge fans of chocolate! (me, not so much!) I like to use the brightness of lemon for most of the batches of these. But chocolate could be added as a middle layer for another version (but skip the lemon then!)

I use Lemon Essential Oil for my flavor. This oil is created by cold-pressing the rinds of lemons so the flavor is concentrated and oh-so citrusy! The oil is the color of sunshine! I add 2 drops of lemon essential oil to the batter right as the last ingredient. If this is your first time using lemon essential oil, I recommend starting with one drop and then adding more to your preference.
